Cacao, or Cocoa, is an evergreen tree which grows naturally in tropical climates, used in diets for centuries, and more recently known for its nutritional content. The beans are cleaned, dried, peeled and broken into small pieces (nibs) which are pressed to extract the fat content, cacao butter which is filtered and moulded.
